2005 Meatless Monday Scholars

Drexel SPH students Carol Staubach and Jean Wallace (Executive Program Class of 2005, faculty advisor Assoc. Professor Marcia Polansky) were named Meatless Monday Health Communication Scholars on August 26. Meatless Monday is a campaign funded by Johns Hopkins and Columbia Universities, using "the simple concept of going without meat one day a week to underscore the importance of decreasing saturated fat in the diet....to help prevent heart disease, strokes, diabetes and cancer."

Staubach and Wallace were cited for their "campaign to help adolescents and teens in Media, PA school district increase their knowledge, enjoyment, and consumption of meatless dishes and other healthy foods. Activities include a school-based TV show featuring student chefs, an after-school cooking club, student-inspired meatless dishes served in the school cafeteria on Mondays, and student-led cooking demonstrations at local events for the wider community."

The project was one of only five funded nationally for 2005-06. Staubach and Wallace join Lynnette Hammond '04, whose "meatless" proposal was similarly awarded last year.
